On those days when I don’t really want to order takeout, but I also don’t really want to cook (let’s be honest, those days are often), scrambled egg tacos are my hero.
The base of the recipe is always the same: corn tortillas, scrambled eggs, avocado and salsa. I usually put all the ingredients on the table and let everyone assemble their own. Everyone’s always happier that way.
Sometimes I’ll add whatever other leftovers we may have in the fridge. Things like black beans, chicken sausage, grated cheese, corn kernels or even roasted vegetables.
It’s a simple and inexpensive meal, but also very comforting and satisfying. My kind of meal.
