Roasted Cherry Tomato Pasta Bowl


  • 1 box Banza spaghetti made from chickpeas
  • 2 tablespoons olive oil + extra for finishing
  • 2 pints cherry tomatoes, halved
  • 2 garlic cloves, finely diced
  • Salt + pepper
  • Big handful of fresh basil, torn
  • A few shaves of Parmesan


  1. Preheat oven to 425℉
  2. Drizzle olive oil into a 9 x 13-inch baking dish
  3. Add tomatoes, garlic, and a generous sprinkle of salt + pepper; toss well
  4. Roast for about 30 minutes, until tomatoes soft and charred
  5. While tomatoes are roasting, cook and drain Banza according to package directions
  6. Toss together Banza and roasted cherry tomatoes. Drizzle with a bit of extra olive oil and top with basil and parm. Enjoy!
