This Roasted Cherry Tomato Pasta Bowl with fresh basil and wee bit of parm is one of my family’s all-time favorites. We honestly make it at least once a week. I mean who doesn’t like a big ‘ol bowl of pasta, right?
Simple + Delicious
It also happens to be gluten-free and packed with protein + fiber thanks to the deliciousness of Banza, which is pasta made from chickpeas.
Not only does it taste great, but check out these nutrition facts!
Impressive, right? Best of all, all that protein and fiber means you’ll actually stay full for more than a millisecond, unlike traditional pasta.
How I Make Everyone Happy
I’ve gotta admit, my little one LOVES cherry tomatoes, but won’t touch them if they’re roasted. Go figure. So, I usually save a few tomatoes before I put them in the oven. Then, once we’re ready to eat, I just add the raw ones to her bowl. It’s an easy tweak and it makes everyone happy!
