Apple Peanut Butter Rings

Ingredients

  • 1 medium apple (I like Ambrosia, Kanzi and HoneyCrisp)
  • 1/4 cup natural creamy peanut butter
  • 2 tablespoons unsweetened shredded coconut flakes
  • 2 tablespoons lightly sweetened dried cranberries
  • Other "shmear" options (instead of peanut butter): sunflower seed butter, cream cheese
  • Other topping options: granola, chocolate chips, sunflower seeds

Directions


  1. Core apple, then slice into 8 rings (about 1/4-inch thick). Leave the skin on (yay for nutrients!)
  2. Place each slice on a flat working surface and spread with equal amounts of peanut butter.
  3. Sprinkle with coconut flakes and dried cranberries
