Sweet Potato Crisps with Pomegranate Guacamole

Sweet Potato Crisps with Pomegranate Guacamole

  • 2 large, ripe avocados
  • 2 garlic cloves, peeled and finely minced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon sea salt
  • 16 Breton Artisanal Sweet Potato and Ancient Grains crackers
  • 1/4 cup pomegranate arils (seeds)

Directions

Sweet Potato Crisps with Pomegranate Guacamole


Cut both avocados in half. Remove the pits and scoop the flesh of the avocados into a medium mixing bowl.

Add garlic, cilantro and lime juice. Use a fork to mash everything together. Add sea salt. Taste and adjust seasonings, to your preference.

Plate Breton Artisanal Sweet Potato and Ancient Grain crackers on a serving platter. Scoop a heaping tablespoon of guacamole onto each cracker. Sprinkle with pomegranate arils and serve.
