  • 6 eggs
  • 1 tablespoon butter
  • 8 corn tortillas
  • 1 avocado
  • pico de gallo (or favorite hot sauce)
  • salt and pepper, to taste
  • optional: chicken sausage, cheese, guacamole, ham, cilantro, etc.

Scrambled Egg Tacos


  1. Whisk the eggs in a medium bowl until the whites and yolks are well mixed.
  2. Melt the butter in a medium sauce pan over medium-low heat.
  3. Once the butter is melted, pour in the eggs and stir until cooked through. Put them on a plate and sprinkle with salt and pepper, to taste.
  4. Meanwhile, slice the avocado and prep any optional ingredients and your corn tortillas. I like to toast the tortillas directly on the gas burner of my stove, flipping them with tongs.
  5. Put everything on the table and let everyone make their own tacos.
