Dave’s One Pot Chicken Burritos

  • 2.5 lb. package of frozen boneless skinless chicken tenders (this is about 12-15 tenders). {Tip: plan for 2-3 tenders/person depending on age and appetite.}
  • 24 oz. jar of red or green salsa
  • 1-2 cups water
  • 1.5 cups dry quick cooking brown or white rice
  • Optional: bell peppers, black beans, chilies, corn, onions
  • For serving: tortillas, avocados, chopped cilantro, shredded cheese and lettuce, sour cream


Dave’s One Pot Chicken Burritos

Place frozen chicken tenders in a stock pot or large high sided skillet.

Add salsa and 1 cup of water.

Heat over medium heat until the mixture starts to boil.

As chicken cooks, separate it with a spatula until it is tender enough to shred.

Use two forks to pull chicken apart into a fine shred.

After all chicken is shredded, add desired amount of rice to absorb the extra liquid. If there is not any extra liquid, add an extra cup of water.

Stir in your favorite vegetables and/or beans, as desired.

Serve in a tortilla or over a bed of greens or tortilla chips and finish with your favorite fresh Mexican toppers.
