Anne’s Black Bean Quinoa Salad

Ingredients

  • 3/4 cup quinoa
  • 1 cup frozen corn (or fresh if in season)
  • 1 can black beans (or garbanzo)
  • 1 cup chopped tomato
  • 3 sliced scallions
  • 1/2 cup chopped cilantro
  • 1 cup (1 medium) chopped bell pepper
  • 1.5 juicy limes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt, to taste
  • 1 avocado (optional)
  • 1/4 cup pepitas (pumpkin seeds / optional), lightly toasted or raw

Directions


 

Cook quinoa in 1.5 cups water. Add frozen corn to cool quinoa and defrost corn.

Transfer cooked quinoa and corn to a serving bowl. Add rest of ingredients and mix well.

Gently stir in sliced avocado and sprinkle with pepitas just before serving.
