Ingredients

Veggie Sandwich

  • 2 slices whole grain bread
  • About 2 tbs hummus
  • About 2 tbs avocado (or about 1/4 of a fresh avocado)
  • Small handful of spinach
  • 4-5 slices of cucumber
  • 4-5 carrot slices
  • 2 tbs black olives

Directions

Veggie Sandwich


  1. Toast bread
  2. Smear one piece of toasted bread with hummus; layer the veggies on top
  3. Smear guacamole or avocado on the remaining piece of toasted bread and place on top to make your sandwich.
